Honey buffalo chicken bites are the perfect way to satisfy your sweet and spicy cravings. This recipe features tender crispy chicken tossed in a honey buffalo sauce, garnished with chives and dipped in garlic aioli.
Info and tips for honey buffalo chicken bites
To make the chicken extra crispy we are using crushed up cornflakes. You can also use panko as a substitute instead, but it won’t be as crispy. I like to air fry these for 12-14 minutes, but you can also use your oven. It may take a bit longer though. Be sure to cut a chicken bite in half to test doneness.
Instead of the classic eggs and flour binder, I like to use mayo! Mayo has a ton of flavour which will help marinate the chicken, keep the chicken nice and juicy, and the cornflakes stick super well to it. It’s way less of a mess in my opinion and less effort. If you’re not a fan of mayo no worries, you can substitute plain Greek yogurt instead.

Ingredients for honey buffalo chicken bites
Chicken
- 3 chicken breasts
- 2/3 cups mayo
- tsp paprika
- tsp cajun
- tsp chili powder
- tsp garlic powder
- tsp onion powder
- tsp salt
- tsp pepper
- 3-4 cups cornflakes
- 2/3 cups buffalo sauce
- 1 tbsp honey
- 1 tbsp butter
Sauce
- 1/2 cup mayo
- 1 garlic clove
- 1/2 lemon juiced
- Chives (for topping)
Instructions
- Start by cutting your chicken breasts into bite sized pieces. Be sure to remove any extra fat or tendons.
- Add the chicken to a bowl along with the mayo and spices and mix well.
- Add 3-4 cups of cornflakes to a plastic bag and roll out to crush them into small pieces (it took me about 3 and a 1/2 cups to coat my chicken, but it will depend on the size of your chicken breasts).
- Dip the mayo covered chicken into the crushed cornflakes to coat. Repeat this until all the chicken is coated.
- Cook in the air fryer for 12-14 minutes at 350 until golden brown and cooked through. Keep in mind if you use an oven instead it might take an extra few minutes to cook the chicken completely.
- Meanwhile heat the buffalo sauce, honey, and butter in a sauce pan until warm and combined.
- Pour the sauce over the cooked chicken and toss to combine.
- Make the garlic aioli by mincing the garlic and combining it with the mayo and lemon juice. Season with a little salt and pepper.
- Plate the chicken bites with some chives and serve with the garlic aioli for dipping and enjoy!
