Bang Bang Chicken Bites

Bang bang chicken bites are the third recipe for my College Cooks series. They feature tender juicy chicken smothered in a sweet and spicy sauce, served with rice and topped with chives.

Info and tips for bang bang chicken bites

I like to use an air fryer to cook the chicken, I find it’s the fastest and easiest way. If you don’t have an air fryer you of course can use your oven using the same temp (400 degrees Fahrenheit), just note you might have to cook them a little longer than the air fryer time.

I used chicken breast for this recipe, but chicken thighs would also work. I like to serve mine with some rice, but you can also serve with any type of potatoes, pasta, or greens that you would like.

The chicken bites store and freeze well, and would also be great addition to your meal prep.

Equipment

This is my Ninja Air Fryer that I use pretty much every single day. Definitely recommend this one for it’s size and different features.

Ingredients for bang bang chicken bites

  • 4 chicken breasts
  • tsp salt
  • tsp pepper
  • tsp onion powder
  • tsp garlic powder
  • tsp Cajun seasoning
  • 1/4 cup sweet chili sauce
  • 1/4 cup mayo
  • 1/2 tbsp sriracha
  • chives (for topping)
  • red pepper flakes (for topping)
  • rice (optional for serving)

Instructions

  1. Start by preheating your air fryer or oven to 400 degrees Fahrenheit.
  2. Prep your chicken by removing any fat or tendons. Cut into even bite sized pieces.
  3. Add all listed seasonings to the chicken in a large bowl and mix well.
  4. Mix the sweet chili sauce, mayo, and siracha in a bowl to make the bang bang sauce.
  5. Add half of the sauce to the chicken and fold till each piece is coated.
  6. Place the chicken bites on a lined sheet pan and cook in the air fryer/oven for 12-15 minutes or until cooked through.
  7. Remove and serve with your side of choice (I did rice) and drizzle the remaining bang bang sauce over the chicken. Top with some fresh chives and red pepper flakes and enjoy!
