Easy Udon Stir Fry

If you’re looking for a super easy meal that you can make in 20 minutes or less, this is the perfect choice. The udon noodles are paired with tender sukiyaki beef, fresh bok choy, and then covered in a spicy soy sauce.

Ingredients

  • udon noodles
  • small package sukiyaki
  • 3 garlic cloves
  • 1/2 inch ginger
  • 3 bok choy
  • 1/4 soy sauce
  • 1-2 tbsp rice vinegar
  • tbsp chilli garlic sauce
  • tsp sesame oil
  • green onion
  • cilantro
  • lime
  • sesame seeds
  • garlic powder
  • onion powder
  • salt & pepper

Instructions

  1. Begin by cutting all the veggies. Small mince the garlic and ginger, cut the bok choy into 1 inch pieces. Slice green onions and cilantro and set all aside.
  2. Make the sauce by combining soy sauce, rice vinegar, chilli garlic sauce, sesame oil, half of the garlic and ginger, and seasonings.
  3. Slice the sukiyaki into thin strips. Add to a hot oiled pan on medium/high heat . Cook for a couple minutes and add in half n the minced garlic and ginger. Season to liking.
  4. Meanwhile soak the udon in hot water for roughly 5 minutes.
  5. Add in bok choy and udon to the pan. Toss together and add the sauce. Mix together on low heat for 1-2 minutes until sauce is evenly distributed.
  6. Top with lime, cilantro, green onion, and sesame seeds if desired. Enjoy!
