Hot Honey Chicken With Mango Salsa

Hot honey chicken with mango salsa is such a fresh summer meal with lots of fun flavours. This recipe features hot honey glazed chicken thighs on a fluffy bed of rice, topped with colourful mango salsa.

Info and tips

The hardest part about this recipe in my opinion is the prep. There is a lot of cutting to make the mango salsa, I definitely recommend a sharp big knife to help decrease the cutting time. When cutting a mango I find it easiest to slice around the pit and then scoop out the fruit with a spoon. You can also peel your mango before if you don’t want to scoop. When you start on the chicken, let the mango salsa sit and rest to the side, this will help maximize flavour as the lime juice sort of marinates with the other ingredients.

You are welcome to use chicken breasts instead of chicken thighs if you’d like! Either will work great. I used a cast iron pan with grill marks to cook the chicken, but you can use a normal frying pan or even a barbeque! I like to start applying the hot honey glaze when the chicken is almost 3/4 done. Just keep brushing it on both sides until all the sauce is used up.

I would recommend starting your rice before you start making the hot honey glaze. I left out instructions for the rice as everyone makes it completely different. Whether you’re using a rice cooker or a pot, make sure you time it right so it’s ready when the chicken finishes cooking!

Ingredients

  • 1 mango
  • 1/2 red pepper
  • 1/4 red onion
  • 1 small avocado
  • handful fresh cilantro
  • 1/2 lime juiced
  • salt & pepper (to taste)
  • 2 tbsp honey
  • 1 tbsp sriracha
  • 1 clove minced garlic
  • 2 tbsp chicken broth
  • 4-6 chicken thighs
  • salt & pepper
  • tsp each garlic & onion powder
  • rice (enough for 4 people)

Instructions

  1. Begin by prepping all the ingredients for the mango salsa (mago, red pepper, red onion, avocado, cilantro). Make sure everything is cut into even small pieces and add to a bowl. Add juice from half a lime and salt and pepper to taste. Mix well and set aside to rest.
  2. Begin preparing the hot honey glaze by combining honey, sriracha, minced garlic, and chicken broth in a bowl. *side note: if you haven’t already, begin cooking your rice at this point*.
  3. Cut any excess fat off the chicken thighs. Add salt & pepper and garlic & onion powder evenly to the chicken. Drizzle a bit of oil over the chicken as well.
  4. To a oiled pan on medium heat add the chicken. Cook for a few minutes on each side. Begin adding the glaze to each side as they finish cooking. Continue glazing until the chicken is cooked through and all the hot honey has been used.
  5. Assemble the bowls by placing the rice on the bottom, with the hot honey chicken on the side, and the mango salsa on top. Add a lime wedge and more fresh cilantro to each bowl if desired and enjoy!

Notes

Cilantro substitutions: parsley, basil, or dill. Chicken breasts can also be used instead of thighs.
