Info and tips for chocolate strawberry yogurt clusters

The freezing times seem to be the most important part if this recipe. I personally don’t like my yogurt to be icy, so I found that only leaving them to freeze for an hour was enough for them to set, but still be creamy. If you do like that icy texture I recommend leaving them a total of two hours in the freezer.

When dipping the frozen yogurt in the chocolate you will have to work fast. If the chocolate cools down too much it won’t stick to the yogurt. If this happens no worries, just pop it back in the microwave with a little more coconut oil and it’ll loosen up again.

The chocolate will start to set as soon as it touches the yogurt cluster, but I like to pop in the freezer for 10 minutes more before enjoying!

Equipment

These Stainless Steel Sheet Pans are perfect for freezing the clusters.

These Ceramic Berry Baskets are SO CUTE for summer I had to share.

Ingredients for chocolate strawberry yogurt clusters

  • 3 cups chopped strawberries
  • 1 & 1/2 cups of yogurt
  • 1-2 cups chocolate chips
  • tbsp coconut oil
  • salt (for topping)

Instructions

  1. Start by chopping all your strawberries into small pieces. I used about a regular size container of strawberries to get three cups.
  2. Combine the strawberries with the yogurt in a bowl. Use Greek yogurt for a healthy option or your favourite flavoured yogurt if you want them sweeter.
  3. Spoon the strawberries and yogurt into circular clusters on a parchment lined baking sheet. Freeze for about an hour for a softer smoother texture or two hours for a harder icy texture.
  4. Melt the chocolate chips and coconut oil in the microwave and stir until smooth. Dip each strawberry yogurt cluster in the chocolate. If the chocolate starts to cool it wont stick as well, if this happens pop back in the microwave with a little more coconut oil and chocolate.
  5. Top each cluster with a sprinkle of salt if desired before they cool.
  6. Place back in the freezer for 10 minutes until the chocolate is set and enjoy!
