Creamy garlic pesto gnocchi is the sixth episode in my college cooks series. This recipe features gnocchi cooked in a creamy garlic pesto sauce that only takes 15 minutes all in one pan.

Info and tips for creamy garlic pesto gnocchi

This recipe only uses one pan so I recommend using a good stainless steel pan with high sides. If you don’t have one no worries, a sauce pan or regular frying pan will work too.

Make sure you stir frequently as the gnocchi cooks to prevent sticking. It should only take 4-5 minutes for the gnocchi to soften. You will notice as the gnocchi cooks the sauce will get thicker as more and more starch gets released. You can use either fresh or shelf stable gnocchi for this recipe. Keep in mind fresh won’t need as long to cook.

If you want to make this meal more rounded you can add in spinach, cherry tomatoes, mushrooms, shrimp, chicken, or anything you can think of!

Ingredients creamy garlic pesto gnocchi

  • 3 cloves of garlic
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 500g of gnocchi
  • 1/4 cup pesto
  • parmesan (as much as you want!)
  • 1 lemon wedge squeezed
  • handful minced parsley
  • tsp italian seasoning
  • salt & pepper to taste

Instructions

  1. Start by mincing the garlic. Add to a pan on medium heat with some oil, fry for 2-3 minutes until fragrant.
  2. Add the chicken broth and heavy cream to the pan and bring to a gentle boil.
  3. Add the gnocchi and stir. Cook for 4-5 minutes until they soften.
  4. Add the pesto and seasonings in and stir.
  5. Turn off the heat and add parmesan, lemon juice, and parsley. Taste test and adjust anything necessary.
  6. Top with extra parm if you desire and enjoy!
