Feta Avocado Pasta Salad

Feta avocado pasta salad is a super easy to make and customizable, and it’s filled with flavour! It’s packed with veggies and healthy fats like avocado and greek yogurt. Top it off with your favorite protein to make a well balanced meal or side dish!

Info and tips

When making the dressing for the pasta salad, I like to use some of the water from the feta container. It’s quite salty which helps add flavour while making the sauce thinner, because of this I didn’t add any salt to the sauce. Just add splashes to the blender until you get the desired consistency. If you don’t want to use the feta water, normal water will work fine, just keep in mind that you might need to add more seasoning.

I also reserved some pasta water and added it to the bowl with all the components at the end. This helps bind everything together. I also saved a little bit of feta for serving on top.

Ingredients

Sauce

  • 1 block of feta
  • 1 cup greek yogurt
  • 1 avocado
  • 4 garlic cloves
  • handful cilantro
  • 1 lime juiced
  • greek seasoning
  • drizzle of oil

salad

  • 500 g cooked pasta
  • 1 chicken breast
  • 1/2 purple onion
  • 1/2 cucumber
  • 1/2 red pepper
  • handful cherry tomatoes

Instructions

  1. Begin by blending all the sauce ingredients together, adding some of the feta water for thinning as needed. Set aside.
  2. Cook your choice of pasta in salted water until al dente. Set aside.
  3. Cut chicken breasts in half and season. Add to a medium hot oiled pan and fry for a few minutes of each side. Remove and set aside to rest.
  4. Cut all the veggies into small cubes. Add to a large bowl with the pasta, chicken, and sauce. Mix together well.
  5. Serve with more crumbled feta on top and enjoy!
