One Pot Creamy Tomato Orzo

One pot creamy tomato orzo is super easy to make, packed with flavour, and has minimal cleanup. This dish features tender orzo slowly cooked to al dente in the juices of cherry tomatoes and cream, topped with fresh parmesan and basil.

Info and tips

Orzo is a small rice shaped pasta that takes roughly 8-10 minutes to cook, it usually can be found in the pasta section at your grocery store. The main concern with orzo is not to overcook it, or it will become mushy. I find that orzo also likes to stick to the bottoms of pots so make sure you stir often on medium to lower heat.

I like to cook the orzo in this recipe for the first 7-8 minutes in the broth on medium heat uncovered. For the last couple minutes I like to add the cream, reduce to low, and cover. Really making sure all the ingredients become friends with each other.

Ingredients

  • 5 cloves garlic
  • 4 cups cherry tomatoes
  • pinch red pepper flakes
  • tsp italian seasoning
  • salt and pepper (to taste)
  • 2 cups chicken stock
  • 1 1/2 cups orzo
  • 3/4 cup heavy cream
  • parmesan (measure with heart)
  • 2-3 leaves of basil

Instructions

  1. Begin by finely mincing your garlic cloves. Add the garlic to a pot on medium low heat with some oil. Add a pinch of red pepper flakes and saute for a couple minutes until fragrant.
  2. Next add the cherry tomatoes to the pot, cover for a few minutes to blister. After remove the lid and press down gently to burst each tomato. Season with listed seasonings to taste.
  3. Add the orzo to the pot and mix to absorb the juices.
  4. Next add the chicken stock and mix well. Bring to a simmer uncovered for 7-8 minutes, make sure to stir every couple minutes to prevent sticking.
  5. When orzo is almost al dente add the heavy cream, cover, and reduce heat to low for the remainder of cooking (2-3 minutes).
  6. Once tender, shut the heat off and add the parmesan and basil, season again to taste, mix well, serve and enjoy!
