Broccoli Cheddar Soup

To begin my cozy fall recipe challenge we have broccoli cheddar soup. This is such an easy soup to throw together. Its filled with heartwarming flavours, super creamy, and loaded with broccoli and cheese.

Info and tips

When adding the milk to the roux, only pour bits at a time while stirring constantly. This helps ensure the roux is nice and smooth. If you add the milk to quickly it will create lumps.

Also always make sure you are slowly simmering the soup. When milk boils it will seperate, causing your soup to have a curdled texture. Avoid this by using low heats and cooking slowly. The flour will also help lower the chance of curdling. This also goes for the cheese! Add it at the end off heat and slowly melt it in.

I know its extra work, but if you shred your own cheese I promise it makes the recipe taste that much better!

Feel free to add anything to the recipe! Celery, potatoes, or some crusty croutons are all great options!

Ingredients

  • 1/8 cup butter
  • half a white onion
  • 4 cloves garlic
  • 3 tbsp flour
  • 3 cups milk
  • 2 cups chicken stock
  • 1 broccoli head
  • 1 large carrot julienned
  • cheddar cheese
  • parmesan cheese
  • salt & pepper
  • garlic powder
  • onion powder
  • paprika

Instructions

  1. Begin by dicing your onion, mincing the garlic, chopping the broccoli into tiny pieces, and julienning the carrot.
  2. In a large pot on low heat add the butter. Once melted add the onions and saute until soft and clear. Add the garlic and saute for a minute.
  3. Next add the flour and mix until thick. Slowly begin adding the milk bits at a time to avoid clumping. Once the milk is almost simmering add the chicken stock.
  4. Bring this to a low simmer and add the broccoli and carrots. Simmer for roughly 8-10 minutes or until veggies are softened.
  5. Off heat add the shredded cheeses and seasonings to your taste preference. Stir together and enjoy! Serve with crusty bread, caesar salad, or anything you’d like!

    Hi! I’m excited to try this but unsure how much cheddar and parm I should use?

      I eyeballed it, but I used roughly 2 cups of cheddar and maybe 3/4 cup of parmesan!
