Mini Egg Easter Nests

Mini egg easter nests are a family favourite to make on easter, they are super fun for everyone and are so simple but absolutely delicious. This recipe features soft and chewy rice krispies shaped into bird nests and filled with mini eggs.

Info and tips

This is a super simple recipe. Instead of melting the marshmallows in a pot, I like to use the microwave. For some reason this helps the rice krispies stay nice and soft. When you shape the rice krispies into nests I find it helpful to use a little bit of butter on your hands. This helps it not stick to your hands.

As the mixture cools the nests will begin to hold their shape more. Make sure you use all the rice krispy mixture before it cools, it should be warm while you form the nests. Add the Mini Eggs to the nests and give them a little push so they stick.

Ingredients

  • 40 marshmallows
  • 1/4 cup butter
  • tsp vanilla
  • 6 cups rice krispies
  • mini eggs

Instructions

  1. Count out 40 marshmallows and add to a large microwave safe bowl. Melt until the marshmallows puff up and are melty.
  2. Add 1/4 cup melted butter to the bowl along with the vanilla.
  3. Add the rice krispies starting with 4 cups. Add the last two cups one at a time until you reach the right consistency. Mix well.
  4. Spread a little bit of butter on your hands and begin forming the rice krispies into nests. Keep forming until you have used all the mixture.
  5. Add the mini eggs to the middle of the nests, press down slightly.
  6. Let cool/set for an hour and enjoy!
