Easy roasted chickpea pitas are a meal I’ve been loving having on my dinner rotation lately. It features chickpeas roasted in seasonings, served on a warm pita topped with greek salad and tzatziki sauce.

For this recipe I show you how to make your own simple Greek dressing. Making your own dressings seriously levels up any salad. Most store bought dressings are filled with unnecessary ingredients and fillers. Homemade dressings are a wonderful way to get in healthy fats, and they also taste wayyy better.

A simple way to always have something to eat is to buy canned things. Canned chickpeas and beans are great ingredients to keep on hand at all times. There are so many different meals or snacks that you can make from just one can- like this recipe!

Having a good Sheet Pan will help your chickpeas get nice and crispy.

Ingredients for easy roasted chickpea pitas

  • 2 cans of chickpeas
  • 1-2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt and pepper
  • 2 handfuls of salad mix
  • 4 baby cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • Β½ red onion
  • feta (for serving)
  • tzatziki sauce (for serving)
  • 4 Pitas

Dressing

  • β…“ cup olive oil
  • ΒΌ cup red wine vinegar
  • 2 cloves garlic, minced
  • Β½ tsp oregano
  • Β½ tsp salt
  • ΒΌ tsp pepper
  • 1 tsp dijon mustard
  • 2 tsp honey

Instructions

  1. Preheat oven to 400F. Begin by pouring the drained chickpeas onto a parchment lined baking sheet. Coat with olive oil and listed seasonings. Mix well and bake for 20-25 minutes until slightly crispy and golden.
  2. Meanwhile make the salad by slicing cucumbers, cherry tomatoes, and red onion. Add to a bowl with the salad mix. Shake all dressing ingredients together and pour over the salad, tossing to coat.
  3. Warm you pitas briefly in the oven or microwave. Assemble with the salad, chickpeas, feta, and tzatziki sauce. Enjoy!
