Cajun alfredo chicken meatballs are the perfect hearty dinner that will warm you from the inside out. This recipe features spiced chicken meatballs, served on a warm bed of mashed potatoes, topped with a creamy Cajun sauce.

Info and tips

I used ground chicken for this recipe but you can also use ground turkey or beef depending on your preference. This recipe is super easy to prep as you can make the meatballs in advance and refrigerate until needed.

Cajun alfredo chicken meatballs also makes a great freezer meal. I like to serve the meatballs with mashed potato, but you can also serve over noodles, rice, or any other preferred grain.

Although this meal is relatively easy, it does require good timing and a few pots. I recommend starting with boiling the potatoes and cooking the meatballs in the oven. While those two are cooking is when you should prepare the sauce. That way everything finishes cooking at the same time!

Ingredients

  • 500 g ground chicken
  • 1 egg
  • 1-2 tsp Cajun seasoning
  • tsp garlic powder
  • tsp onion powder
  • 1/2 tsp cayenne powder
  • tsp paprika
  • salt & pepper (to taste)
  • 1/3 cup panko breadcrumbs
  • 1/2 white onion
  • 1/2 green pepper
  • 4 cloves garlic
  • 2 tbsp tomato paste
  • 1 1/2 heavy cream
  • handful cherry tomatoes
  • 1-2 handfuls spinach
  • 1/3 cup parmesan
  • fresh parsley (for topping)
  • 4 potatoes

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. If you’re serving with mash potatoes peel and cut the potatoes into even cubes before adding to a pot with cold water. Bring to a boil and continue simmering until fork tender. It should take around 20-25 minutes depending on the size of cubes. (tip: time your mash potatoes and meatballs to finish cooking at the same time).
  3. Combine the ground chicken, egg, panko, and all listed seasonings to a bowl. Mix the ground chicken well until evenly combined. Roll out equal sized meatballs and place on a lined baking sheet. Cook in the oven for 18-20 minutes.
  4. While the meatballs cook start on the sauce. Begin by dicing the onion and green pepper, and mincing the garlic. Slice the cherry tomatoes in half, and roughly chop the spinach to finish your prep.
  5. Add the onions and green peppers to a pan on medium heat. Sauté for a few minutes before adding the garlic. Next add the tomato paste and cook for another minute.
  6. Add in the heavy cream, mix well and bring to a simmer. Add in cherry tomatoes and spinach.
  7. Turn the heat to low and add in a tsp each of: Cajun seasoning, garlic powder, onion powder, salt, and pepper. Add in parmesan. Mix everything in well and taste test.
  8. Mash your potatoes with a splash of heavy cream and season to taste.
  9. Serve with the mash on the bottom, meatballs on top, lots of the creamy Cajun sauce, and a sprinkle of fresh parsley. Enjoy!
