Creamy Garlic Smothered Chicken

Creamy garlic smothered chicken is one of my all time favourite go to meals. It’s fairly easy and you can combine it with multiple different sides. This dish features golden crispy chicken smothered in a creamy garlic sauce, topped with parmesan, red pepper flakes, and fresh parsley.

Info and tips

One lazy trick I use frequently when I’m frying chicken is using mayo, flour, and seasonings.

The first step is to cut your chicken into thin cutlets, making four even sized pieces. The next thing I like to do is cover the chicken breasts with a little bit of mayo. This helps the seasonings stick to the chicken. I find that mayo is a great binder and colours the chicken a beautiful brown. Just dip your chicken in the flour and seasoning mixture on both sides and you’re good to fry.

You can serve creamy garlic smothered chicken with rice, mashed potatoes, pasta, or any other side you desire!

Ingredients

Chicken

  • 2 chicken breasts
  • 1-2 tbsp mayo
  • 1/4 cup flour
  • tsp paprika
  • tsp onion powder
  • tsp garlic powder
  • 1/2 tsp oregano
  • tsp salt
  • tsp pepper

Sauce

  • 6 garlic cloves
  • 1/2 onion
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup chicken stock
  • 1 cup heavy cream
  • parmesan to taste
  • salt to taste
  • pepper to taste
  • parsley to serve
  • red pepper flakes to serve

Instructions

  1. Begin by mincing your garlic and onions. Set aside. Slice the two chicken breasts into four even cutlets. Set aside.
  2. On a plate add the flour and seasonings, mix thoroughly with a fork. Spread the mayo onto the chicken and dip both sides into the flour seasoning mixture.
  3. In a medium hot oiled pan add the chicken breasts. Fry for 2-3 minutes on each side or until golden brown and cooked through. Set aside on a clean plate to rest.
  4. In the same pan add the onions, cook for a couple minutes until soft. Add in the garlic and cook for one minutes until fragrant. Add the butter. Once melted add the flour and mix until thick.
  5. Add the chicken stock and bring to a simmer. Once simmering add the heavy cream.
  6. Shut the heat off and season to your liking, add shredded parmesan to taste.
  7. Add the chicken breasts back to the sauce, top with parsley and red pepper flakes.
  8. Serve with rice, potatoes, pasta, or your choice of side. Enjoy!
