Buffalo Chicken Wonton Cups

Buffalo chicken wonton cups are one of my favourite appetizers to make. They’re relatively simple and can be made ahead of time if needed. This recipe features crispy golden brown wontons, filled with a mixture of cheesy buffalo chicken, topped of with drizzles of blue cheese dressing, and green onions.

Info and tips

I like to bake the wonton wrappers first without the filling. This will help them form that cup shape and also get golden brown. I recommend buying some spray oil to spray the muffin tin and the wrappers as well. It’s important that the wonton wrappers are sprayed with a decent amount of oil. This is because they are covered in cornstarch and won’t become golden brown and bubby if baked without enough oil.

You can also buy a rotisserie chicken to skip frying and shredding your own chicken breast if you’d like. If you want to prepare this recipe ahead of time just bake the wonton cups and make the filling. Store these separately in air tight containers until you’re ready to bake. Once you’re ready just fill the wonton cups and bake as usual.

Ingredients

  • 12 wonton wrappers
  • spray oil
  • 1/2 block cream cheese (room temp)
  • 1 chicken breast
  • salt & pepper (to taste)
  • 1 cup shredded cheddar
  • 2 green onions
  • 1/4 cup buffalo sauce
  • blue cheese dressing (for topping)
  • extra green onions (for topping)

Instructions

  1. Preheat the oven. Prepare the wontons first. Spray a muffin tin with some oil. Make sure the bottoms are well oiled. Add a wonton wrapper to each hole, pressing down in the middle of the wrapper until the edges fold snugly around the muffin tin. Spray each wonton with more oil, making sure they are covered. Bake at 350 for 7-8 minutes.
  2. Meanwhile fry the chicken breast, season well with salt and pepper and/or your favorite seasoning blend. Cook on both sides for a few minutes until cooked through. Set aside to rest for 5 minutes.
  3. Shred the chicken and add to a bowl along with room temperature cream cheese, shredded cheddar, sliced green onions, and buffalo sauce. Mix well.
  4. Add the mixture to the cooked wonton wrappers, add more cheese on top if desired. Place in the oven at 350 for about 12 minutes until bubbly and golden. Remove and drizzle blue cheese dressing and more green onions on top if desired. Enjoy!
