Cranberry Pecan Boursin Crostini

Info and tips

I like to use silicone cooking brush to brush on the olive oil, but you can also just drizzle it. I also like to rub a clove of garlic on the bread after it comes out of the oven for some extra flavor, but this is optional. The crispy bread will almost grate the garlic into a paste which gives it that garlic bread flavour.

You can use any flavour or brand of spreadable cheese for this recipe that you’d like. I also made my own candied pecans just by cooking a 1/4 cup of regular pecans with 2 tbsp of maple syrup on low heat for about 10 minutes or until the sugar crystalizes. You can do this or just buy the store bought ones.

Ingredients

  • 1 Baguette
  • few tbsp olive oil
  • salt & pepper
  • 1 cranberry & pepper Boursin block
  • 1/4 candied pecans
  • 1/4 dried cranberries
  • tbsp orange zest
  • 1-2 tbsp fresh rosemary

Instructions

  1. Preheat the oven to 375.
  2. Cut baguette into slices and drizzle with olive oil on both sides. Lightly season with salt and pepper. Bake in the oven for 8 minutes, flip and then another 8 minutes.
  3. Once the baguette is golden brown, spread the Boursin cheese on each piece evenly.
  4. Add the candied pecans, dried cranberries, orange zest, and rosemary to each piece.
  5. Add to a serving tray and serve! Happy holiday cooking πŸ™‚
