Apple crumble muffins are perfect for cozy fall weather! They are soft and fluffy with juicy apples throughout and a buttery cinnamon streusel topping that bakes up golden and crisp.
Info and tips for apple crumble muffins
- Use a good baking apple: Honeycrisp, Granny Smith, or Pink Lady are great options because they hold their shape and add a nice balance of sweet and tart.
- Dice the apples small: Smaller pieces distribute more evenly throughout the muffins and make every bite apple-filled.
- Donβt overmix the batter: Mix just until the dry ingredients are incorporated. A few small lumps are totally fine and help keep the muffins tender.
- Fill the muffin cups generously: Filling them about ΒΎ full gives you a nice, bakery-style muffin without overflowing.
- Sub kefir for buttermilk: I used kefir in my muffins but you can also sub buttermilk. Both have a similar ph level which reacts to the baking soda.

Ingredients for apple crumble muffins
Muffins
- 1 ΒΎ cup ap flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- Β½ tsp salt
- Β½ cup softened butter
- Β½ cup brown sugar
- ΒΌ cup granulated sugar
- 2 eggs
- 1 cup buttermilk or plain kiefer
- 2 tsp vanilla
Apple mixture
- 1 Β½ cups chopped apples
- ΒΌ brown sugar
- 2 tbsp butter
- Β½ tsp cinnamon
- β tsp nutmeg
Crumble
- ΒΌ cup brown sugar
- ΒΌ cup granulated sugar
- ΒΌ cup ap flour
- ΒΌ cups of oats
- Β½ tsp cinnamon
- ΒΌ cup salted butter
Glaze
- Β½ cup powdered sugar
- 1-2 tbsp heavy cream
- Β½ tsp vanilla
Instructions
- Begin by making your crumble by mixing the brown sugar, granulated sugar, flour, oats, and cinnamon together. Add the cold butter and mix in with your hands using a crumbling motion until the consistency is a moist crumbly texture.
- Next dice your apples into small pieces. Add the apples to a saucepan along with the brown sugar, butter, cinnamon, and nutmeg, continue cooking on low for 5-8 minutes then remove from heat and set aside.
- Start making the batter by mixing your dry ingredients together in a bowl (flour, baking powder, baking soda, cinnamon, and salt.
- Cream the butter and sugars together in a stand mixer on medium speed for a few minutes until light and fluffy. Mix in the eggs, buttermilk, and vanilla and beat again for 1-2 minutes.
- Fold the dry ingredients into the wet, careful not to overmix. Fold in half of the apple mixture.
- Scoop the batter into parchment lined muffin tins, skipping every other tin so that the muffins have room to rise. Top with a spoonful of the apple mixture and crumble mixture. Bake at 350F for 25-30 minutes.
- Meanwhile make the glaze by combining all ingredients. Once muffins have cooled, drizzle the glaze over top and enjoy!
