Tomato boursin spaghetti squash is a cozy, cheesy dinner made with roasted spaghetti squash, creamy Boursin, juicy tomatoes, crispy hot Italian sausage, melted mozzarella, and fresh basil. It’s the perfect dinner to make when you’re low on energy and time!
Info and tips for tomato boursin spaghetti squash
- For longer spaghetti-like strands, slice the squash crosswise (widthwise), rather than lengthwise. This cuts through the strands instead of shortening them.
- Add the tomatoes and boursin inside the hole with plenty of olive oil. They will create the creamiest sauce as the squash bakes.
- Roast until the flesh is easily pierced with a fork but still holds its shape. Overcooked squash can become watery and mushy.
- Scatter mozzarella over the top at the end and pop back in the oven briefly until melted and bubbly.
- Cook the hot italian sausage separately until crispy and caramelized, then add overtop of the melted mozzarella. This will add so much flavour to the squash.

Ingredients for tomato boursin spaghetti sqaush
- 1 spaghetti squash
- drizzle of olive oil
- 1 boursin puck
- 1 cup halved cherry tomatoes
- 1 minced garlic clove
- 1/2 tsp italian seasoning
- 1/4 tsp red pepper flakes
- 1/2 tsp salt and pepper
- 1 cup shredded mozzarella
- 3 spicy italian sausages
- fresh basil for garnish
Instructions
- Preheat your oven to 400 F. Begin by cutting your spaghetti squash crosswise instead of lengthwise. Remove all seeds.
- Cut the boursin in half and place inside each half of the squash. Add the sliced cherry tomatoes and minced garlic to each half as well. Drizzle with olive oil and season with listed seasonings.
- Bake for 45 minutes until you can easily piece the flesh with a fork.
- Meanwhile cook your hot italian sausage in a pan over medium heat. Remove the casing and break apart until crispy and caramelized.
- Once squash is tender, take two forks and carefully pull the spaghetti noodles apart, mixing them in with the melted boursin and tomatoes to create a sauce. Sprinkle with shredded mozzarella and pop back into the oven for 5 more minutes until melted.
- Add the crispy sausage over top along with some fresh basil and enjoy!
