Marry me gnocchi soup is a creamy, cozy one-pot soup made with tender gnocchi, juicy chicken, sun-dried tomatoes, parmesan, and Italian herbs. I couldn’t be more excited to create soups for this fall season, and this recipe is such a wonderful way to kick the season off!

Info and tips for marry me gnocchi soup

  • Season and sear the chicken until golden brown before setting it aside. This adds flavour to the base of the soup, and the chicken can finish cooking in the broth later.
  • Give the onion, carrot, and celery a few minutes to soften (this is called a mirepoix) before adding the garlic and tomato paste. Let the tomato paste cook for a minute or two to deepen its flavour.
  • Add the gnocchi toward the end: Gnocchi cooks quickly, so add it once the broth is simmering rather than at the beginning. Overcooking can make it soft and gummy.
  • Gnocchi continues to absorb liquid as it sits. If the soup becomes too thick, add a splash of chicken stock when reheating or just before serving.
  • Reduce the heat before adding the heavy cream and avoid bringing the soup to a vigorous boil afterward. This keeps the broth smooth and creamy.

Ingredients for marry me gnocchi soup

  • drizzle of olive oil
  • 2 chicken breasts
  • Β½ tsp italian seasoning
  • Β½ paprika
  • Β½ garlic powder
  • Β½ salt and pepper
  • 1 onion, diced
  • 1 carrot, diced
  • 1 celery, diced
  • 5 garlic cloves, minced
  • ΒΌΒ  tomato paste
  • 4 sun dried tomatoes, minced
  • 4 cups chicken stock
  • 4 cups gnocchiΒ 
  • 1 cup heavy cream
  • 2 cups spinach
  • Β½ cup parmesan
  • same seasonings again to taste
  • Β½ a lemon juiced
  • fresh parsley for garnish

Instructions

  1. Season your chicken breasts well with the listed seasonings. Begin by frying your chicken in a large oiled pot over medium heat for a few minutes on each side. They should be browned on both sides but not cooked all the way through. Remove from the pot and set aside.
  2. In the same pot add the diced onion, carrot, and celery. Saute for a few minutes until fragrant and softened then add the minced garlic, tomato paste, and sun dried tomatoes. Saute everything together for another few minutes and season with the listed seasonings.
  3. Pour in the chicken broth and add the chicken back in to finish cooking. Bring to a simmer and cover for 10-15 minutes until chicken is cooked through. Remove the chicken and chop into bite sized pieces or shred.
  4. Add the gnocchi to the soup along with the heavy cream. Cook for 5-10 minutes until gnocchi is al dente.
  5. When the gnocchi is tender shut off the heat and stir in the spinach, chicken, parmesan, lemon juice, and parsley. Taste test and adjust seasonings as needed.
  6. Serve with more parmesan and parsley on top and enjoy!
