Crispy buffalo chicken tacos combine juicy chicken, spicy buffalo sauce, and lots of melty mozzarella, served with a fresh cilantro lime crema. These are perfect for a delicious weeknight dinner, meal prep, or to keep in your freezer for busy days.

Info and tips for crispy buffalo chicken tacos

I like to use chicken thighs for this recipe. Chicken thighs have higher fat which makes them more flavourful, juicy, and harder to overcook. They also absorb marinades and sauce better than chicken breast which make them ideal for this recipe. For an extra bonus they are a lot cheaper as well!

These tacos are excellent to store in your freezer and warm up when needed on busy days. After frying the tacos all you have to do is wait for them to cool completely before wrapping in some saran wrap or tin foil and storing in a freezer bag. Then to reheat just pop them in the oven at 350 F until fully heated through.

This is the immersion blender I used to make the cilantro lime crema. It’s incredibly handy and has so many different uses.

Ingredients for crispy buffalo chicken tacos

  • 8 chicken thighs, minced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt & pepper
  • ΒΎ cup buffalo sauce
  • ΒΌ cup parsley, minced
  • 2 tbsp honey
  • shredded mozzarella (as much as you’d like)
  • Β½ cup sour cream
  • ΒΌ cup mayo
  • 1 jalapeno
  • handful of cilantro
  • 2 garlic cloves
  • 1 lime, juiced
  • flour or corn tacos

Instructions

  1. Begin by slicing off any large pieces of fat on the chicken thighs, then slice them into very small pieces. Add the minced chicken to a bowl along with the listed seasonings and mix well.
  2. Add the chicken to a large oiled pan over medium heat. Let the chicken sit without stirring for a few minutes to allow a nice sear to develop. Then stir and continue cooking until chicken is cooked through and browned.
  3. Turn the heat to low and add the buffalo sauce, parsley, and honey.
  4. Assemble the tacos with a scoop of the buffalo chicken and as much mozzarella as you’d like. Fry both sides in a well oiled pan over medium heat until crispy and golden.
  5. Make the cilantro lime crema by blending the sour cream, mayo, jalapeno, cilantro, garlic, and lime juice. Taste test and season with salt and pepper.
  6. Serve the tacos with the sauce and enjoy!
