Info and tips for pumpkin spice chia seed pudding
- Make sure you use pure pumpkin puree not pumpkin pie filling. Pumpkin pie filling is already sweetened and made to be used in pies, where as pumpkin puree is just pure roasted and pureed pumpkin.
- Make sure you allow the chia seeds to fully absorb the liquid. The chia seeds take on a jelly texture, which makes them easier to digest and better for nutrient absorption.
- I like to top my chia seed pudding with greek yogurt and some homemade granola, but fresh fruit is also a great option!
