Homemade fluffy buttermilk pancakes is the third episode of my “skip the store” series. We are using the leftover buttermilk from my homemade butter recipe to make the fluffiest and most flavourful pancakes. The pancakes are tender, golden, and full of rich flavor thanks to the fresh tangy buttermilk .
Info and tips for homemade fluffy buttermilk pancakes
Using buttermilk in pancakes is a great way to add more flavour and texture. The acidity in the buttermilk reacts with the baking soda which makes a light, fluffy, and tender crumb. Buttermilk also has a natural tang compared to regular milk, which makes these pancake smore rich and flavourful. If you have made my Homemade Butter recipe then I highly recommend you use the leftover buttermilk from that! If not then buying a small carton of buttermilk from the store will work as well.
When making pancakes it’s super important not to overmix. Overmixing can make the pancakes tough. So only stir until everything is just combined, a few lumps are totally normal. letting the batter sit for 5-10 minutes while you preheat your pan is also going to help aid in fluffier pancakes. Add any mix ins you want! Blueberry, or chocolate banana are some of my personal favs π
Equipment

I recommend using a flat pan like this Crepe Pan. It makes flipping the pancakes so much easier!
Ingredients for homemade fluffy buttermilk pancakes
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- Β½ tsp baking soda
- ΒΌ tsp salt
- 1 cup buttermilk (leftover from your butter-making!)
- 1 large egg
- 2 tbsp melted butter (plus extra for cooking)
- 1 tsp vanilla extract
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined β donβt overmix, a few lumps are okay.
- Heat a non-stick pan or griddle over medium heat and melt a little butter.
- Pour 1/4 cup batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Serve warm with your favorite toppingsβmaple syrup, fresh fruit, or my Homemade Butter!
