Marry me chicken meatballs are a great dinner packed with tons of flavour and made in one pot. This recipe features tender basil chicken meatballs in a creamy sundried tomato sauce.

One of my favourite things about this recipe is that it is made in one pot/pan. The meatballs get fried in the pan until brown and golden, and the sauce gets made in the same pan so you get all the browning flavour from the meatballs!
You can add so many things to meatballs which is why they are so great. You can add onions, garlic, fresh herbs, parmesan, breadcrumbs, bacon, sundried tomatoes, eggs, and any seasonings you can dream of. I like to serve these with mashed potatoes but you can also use rice, pasta, or any of your favourite grains.

Ingredients for marry me chicken meatballs
Meatballs
- 1 lb of ground chicken
- 1 egg
- 2 grated garlic clothes
- 1/2 cup panko
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp italian seasoning
- 1 tsp salt & pepper
- 3 tbsp fresh minced basil
Sauce
- 2 tbsp butter
- 1 diced onion
- 3 minced garlic cloves
- 1/2 tsp red pepper flakes
- 4 minced sun dried tomatoes
- 1/4 cup dry white wine
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan
- salt & pepper to taste
- basil for garnish
Instructions
- Begin by making your meatballs by combining the ground chicken, egg, grated garlic, panko, garlic powder, onion powder, italian seasoning, salt & pepper, and basil. Mix well with your hands and form into meatballs.
- Add the meatballs to a pan on medium heat with a drizzle of oil. Fry for 2-4 minutes on each side, continue flipping until the meatballs are browned on all sides and cooked through. Remove from the pan and set aside.
- In the same pan add the butter and diced onion. Fry for a few minutes until the onions start to soften, then add the minced garlic, red pepper flakes, and minced sun dried tomatoes. Cook another 1-2 minutes until fragrant.
- Next add your wine to deglaze. Cook that off for a couple minutes until there isn’t a strong alcohol smell anymore. If you don’t want to use wine just replace with chicken broth!
- Next add your chicken broth and heavy cream. Mix and bring this to a gentle simmer. Continue cooking for a few minutes until it slightly thickens. Then turn the heat to low and stir in the parmesan and basil. Taste test and season with salt & pepper.
- Add the meatballs back to the sauce and heat back through. Serve with your choice of carbs and enjoy!
