Tater Tot Taco Bowl is the ultimate quick and easy dinner for those busy nights when you just need something fun and satisfying. Crispy golden tater tots get loaded up with seasoned taco beef, melty cheese, and all your favorite toppings.

I recommend baking your tater tots for a few extra minutes so they get extra crispy. This will help them hold up the toppings better without getting soggy. I usually just turn the oven to broil towards the end and give them an extra blast of heat. If you want a healthier alternative to the tater tots, I suggest substituting them with a bag of frozen cubed sweet potatoes!

This recipe is definitely meal prep friendly! Just store the tater tots and beef in a container, add your toppings in the morning to keep it fresh, and you’re good to go! You can add any toppings you desire, some ideas are: pico de gallo, guacamole, lettuce, jalapenos, cilantro, sour cream, hot sauce… whatever your favourite taco toppings are!

Ingredients for tater tot taco bowl

  • 4-5 cups tater tots
  • 1 lb ground beef
  • 1 taco seasoning packet
  • 1 onion, diced
  • 2 cups shredded cheese
  • toppings of your choice!

Instructions

  1. Preheat your oven according to the tater tot instructions. Add the tater tots to a lined baking sheet and bake for the specified time. I like to broil them for the last few minutes for extra crispy tots!
  2. Meanwhile cook the ground beef with the onion and taco seasoning until browned. Add any extra seasonings or hot sauce you’d like here.
  3. Prep your toppings of choice. I did some shredded cheddar cheese, guacamole, pico de gallo, and sour cream.
  4. Plate with the tater tots on the bottom, then the taco meat, cheese, and toppings of choice. Enjoy!
