Street corn smash chicken tacos actually shocked me when I took mt first bite, they’re that good. This recipe features ground chicken smashed on a corn tortilla and fried until crispy, topped with a zesty street corn slaw.

I’ve had several people comment that frying the ground chicken can be nerve racking, since one side doesn’t technically touch the pan. But if you fry both sides on a medium heat for a few minutes, the chicken will be cooked all the way through. The chicken is also a very thin layer, so it doesn’t take long to cook through. If you are still stressed, just throw the tacos in an oven or air fryer until you feel comfortable!
I opted to use frozen corn for convenience for this recipe, but you can also use canned corn or even fresh corn if it’s in season!

Ingredients for street corn smash chicken tacos
- 1 cup frozen corn
- 1/2 cup sour cream
- 1/2 cup mayo
- 3 garlic cloves
- 1 jalapeno
- juice of 1 lime
- zest of 1 lime
- 1 tsp of paprika
- 1 tsp of chili powder
- salt & pepper to taste
- 10 corn tortillas
- 450g ground chicken
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt & pepper
- cotija cheese (for garnish)
- cilantro (for garnish)
Instructions
- Start by getting your prep out of the way: mince your garlic, mince the jalapeno, zest your lime, crumble the cotija cheese, and mince the cilantro.
- Next fry your corn in a pan of medium high heat with a drizzle of oil until slightly charred. Remove from the pan into a bowl.
- Add sour cream, mayo, garlic, jalapeno, zest and juice of the lime, paprika, chili powder, and salt & pepper to the bowl. Give it a mix and set the street corn slaw aside.
- Next mix the ground chicken with the garlic powder, onion powder, paprika, and salt & pepper. Spread a thin layer of chicken over the corn tortilla, fry in a pan on medium heat for a few minutes on each side. Remove once chicken has a nice sear and is cooked through.
- Add a couple spoonful’s of the corn slaw to the chicken taco, some crumbled cotija cheese, fresh cilantro, and more lime juice if desired. Enjoy!

February 25, 2025 at 12:56 amThis was such a a tasty dinner, and I had made some adjustments but I’m sure following the recipe to a T would yield even better results. I added lettuce on top of the corn just because it was so saucy, I felt like it needed more to soak it up and it was really good. The other thing was just that I didn’t have sour cream so I used blended cottage cheese (i saw it on tiktok, don’t ask). It was still good but the sour cream would give a better acidity for sure.
It was also fairly quick to make. It took me an hour which is pretty good for a new recipe + it netted me leftovers for tomorrow:)
