One-Pot creamy garlic pasta is a meal I make for myself when I’m short on time and don’t have the mental effort to deal with a bunch of dishes. This recipe features small pasta simmered in a rich, garlicky chicken broth, then finished with heavy cream, butter, and parmesan.
Info and tips for one-pot creamy garlic pasta
This method of cooking pasta involves adding chicken broth, letting the pasta soak it up, adding more chicken broth… and so on until your pasta is cooked. It takes longer than traditionally boiling the pasta because there isn’t enough broth to submerge the pasta completely. Make sure you are stirring frequently as the pasta will try and stick to the bottom if you’re not careful. I find this method worth it though, as it’s incredibly more flavourful, and it takes less dishes which is a bonus.
Equipment

I like to use my Our Place Pan for so many recipes. I’ve had mine for about a year now and so far it has held up great!
Ingredients for one-pot creamy garlic pasta
- 1-2 tbsp olive oil
- 6 minced garlic cloves
- pinch of red pepper flakes
- 1.5 cups small pasta
- 1.5-2 cups chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 1/3 cup parmesan
- salt & pepper to taste
- parsley for garnish
Instructions
- Heat a pan on medium/low heat and add the olive oil. Then add the minced garlic and red pepper flakes. Cook this for 1-2 minutes, carful not to burn the garlic.
- Next add the small pasta to the pan and toast 1-2 minutes.
- Next pour in the chicken broth and bring to a simmer. I used closer to 2 cups of chicken broth, but depending on your pasta shape you may need more or less. Keep simmering the pasta until it absorbs almost all the broth (about 10-15 minutes). Stir every couple minutes to ensure the pasta doesn’t stick to the bottom.
- When the pasta is almost cooked and most of the chicken broth is absorbed add the heavy cream. Mix well and return to a simmer and continue cooking until pasta reaches al dente consistency. Add splashes of chicken broth as needed.
- Then add the butter, parmesan, and salt and pepper to taste. Mix well top with some parsley if desired and enjoy!
