Honey butter feta rolls are kind of similar to a Greek classic- spanakopita but with slightly different ingredients. These feature a cheesy filling of feta, spinach, herbs, and artichoke hearts rolled up in phyllo pastry, baked until golden, and dipped in warm honey butter.
Info and tips for honey butter feta rolls
The hardest part about this recipe is working with phyllo pastry, so here are my tips:
Wait until your phyllo pastry is completely dethawed. This is super important because if you try to unfold the phyllo before it dethaws it will crumble, fall apart, and leave you with a sad paper mess. When you are working with phyllo make sure to keep any sheets you are not actively using covered with a damp towel, this keeps them from drying out. Finally, when you bake phyllo, you want to make sure every area is brushed with oil. This will ensure you have a crispy texture instead of a papery one.
You can store any leftovers in the fridge and air fry again for a couple minutes to reheat.

Ingredients for honey butter feta rolls
- Sheet of phyllo pastry
- 140g feta
- 1/2 cup spinach
- 2 garlic cloves
- 1/4 cup dill
- 1/4 cup artichoke hearts
- oil (for air frying/baking)
- 3 tbsp butter
- 1 tbsp honey
- pinch chili flakes
Instructions
- Start by dethawing your phyllo pastry if its frozen. Don’t be impatient with this step, it’s important to ensure your phyllo pastry doesn’t break/crumble.
- Next make the filling by combining feta, spinach, garlic, dill, and artichoke hearts in a food processor and blend until smooth. Add filling to a Ziploc bag or piping bag.
- Spread out the phyllo pastry and cut into about 3 even sections. Take 2 sheets from a section and pipe on some of the feta filling (watch my video to see roughly the size of my section).
- Brush the edges with some oil and carefully fold and roll into a spring roll shape. Repeat this process until all the feta is used. You may be left over with some phyllo pastry, just refreeze it for another recipe!
- If you are using your oven start preheating to 425.
- Spread out the rolls on a baking sheet and brush each one with oil. Place in your air fryer or oven at 425 for 3-5 minutes on each side. Be sure to flip each roll to get them crispy and golden on all sides.
- Meanwhile heat up the butter, honey, and chili flakes in a small bowl in the microwave for 30 seconds. Watch it carefully as honey likes to boil up and make a mess. Stir well.
- Serve the crispy feta rolls with the honey butter and enjoy!
