Garlic mushroom smothered chicken is my take on a dish for either those who love mushrooms, or even for those who are mushroom hesitant. I absolutely hated mushrooms as a kid and now I love making and eating this dish. This recipe features crispy chicken smothered in a creamy garlic mushroom sauce filled with umami.

Info and tips for garlic mushroom smothered chicken

I love to use a bit of flour when cooking chicken along with seasoning. The flour helps keep the chicken dry, which creates a lovely crispy crust on the outside of the chicken when frying. I kept my seasoning super simple (salt & pepper) but you can also season the chicken with some garlic powder, onion powder, paprika, Italian seasoning, or whatever you’d like!

We are also using flour to help thicken the sauce. When you add flour to the mushrooms and butter it will create a roux, which will help thicken the sauce after adding the chicken stock and heavy cream. You can also use vegetable stock or coconut milk as an alternative.

Ingredients for garlic mushroom smothered chicken

  • neutral oil for cooking
  • 2 chicken breasts
  • tsp salt & pepper
  • 2 tbsp flour
  • tbsp butter
  • 100g shiitake mushrooms (or mushroom of choice)
  • 4 garlic cloves
  • 2 tsp flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • tsp Italian seasoning
  • 1/2 tbsp Dijon mustard
  • 1/4 cup parmesan
  • parsley (for garnish)
  • red pepper flakes (for garnish)

Instructions

  1. First begin by mincing your garlic and slicing your mushrooms, set these aside. Prep your chicken by cutting in half lengthwise to make 4 cutlets. Season with salt and pepper, and coat all sides in flour.
  2. Fry the chicken in a pan with some oil on medium heat for a few minutes on each side. Remove the chicken from the pan when cooked and set aside on a plate to rest.
  3. In the same pan add the butter and sliced mushrooms. Cook down for a few minutes until mushrooms have slightly shrunk before adding the garlic. After 1-2 minutes add the flour and stir well.
  4. Add the chicken broth and heavy cream. Bring this to a simmer and cook for a few minutes until slightly thickened.
  5. Next add the Italian seasoning, Dijon mustard, and parmesan. Stir well until combined.
  6. Add the chicken back into the sauce, spooning it over the chicken to smother it. Garnish with fresh parsley and red pepper flakes. Serve with rice, pasta, potatoes, or your choice of side!
