Fruit spring rolls are a super fun dessert for summertime. These feature chewy rice paper rolled up with fresh strawberries, mango, apple, kiwi, and mint, served with a creamy lime honey dip.

Info and tips for fruit spring rolls

Working with rice paper can be tricky so here are some tips I’ve learned: You only need to dip the rice paper in the water for a second on each side. Definitely don’t leave the rice paper in the water until it softens, this will make it fall apart and be impossible to work with. Once you’ve dipped it in the water on both sides, place it on a flat surface and fill with the fruit. You’ll notice that as you work it will soften, and by the time you’re ready to roll it will be easy to work with.

You can use any fruit you want in these. Some other great options are blueberries, raspberries, peaches, banana, pear, or any type of melon. If you’re not a fan of the strong herby flavour of mint you can absolutely remove it.

Equipment

I find it easiest to use a Ceramic Plate filled with some water to dip the rice paper in.

Ingredients for fruit spring rolls

  • 8 sheets of rice paper
  • handful of mint leaves
  • handful of strawberries
  • 2 kiwis
  • 1 apple
  • 1 mango
  • 1/2 block cream cheese
  • 1 cup heavy cream (125g) softened
  • 1/2 lime juiced
  • 1-2 tbsp of honey

Instructions

  1. Start by chopping all the fruit into thin strips or slices.
  2. Working one at a time, dip a sheet of rice paper into a plate filled with water for only a second on both sides. Remove immediately and place on a flat surface.
  3. Fill with your cut up fruit and fresh mint leaves.
  4. At this point the rice paper should be workable, fold up the ends and roll over to make the spring roll. Repeat this process until you have used up your fruit.
  5. Make the dip by whipping the heavy cream. When it is almost done whipping add the softened cream cheese, lime, and honey. Mix in gently. Add more or less honey depending on your preferred sweetness.
  6. Serve rolls with the dip and enjoy!
