Info and tips for easy Chinese orange chicken
I like using chicken breast, but you can also use chicken thighs. When making the batter for the chicken, it should have a paint like consistency. If it seems too thin, you can always add a bit more cornstarch.
When frying, make sure you use enough oil to cover the chicken. To test the temperature of the oil, I like to drop a couple drops of batter in. If it bubbles up immediately then it’s hot enough. The idea oil frying temperature for most things is in-between 350 and 365, so you can also test the temperature with a thermometer for more accuracy.
Your chicken should take four to five minutes to turn golden brown. Bonus points if you double fry for maximum crispiness! Test doneness by cutting a chicken piece in half, chicken should be tender but cooked through.

This is my favourite Carbon Steel Wok Pan that I use for frying the orange chicken. It works super well for deep frying and regular frying.
I use this Spider Strainer to take the chicken out of the hot oil. This works super well for straining pasta too!
