I have a super tip that I recently discovered! When adding the sliced chicken bites to the flour and seasoning mix, I added roughly about 1-2 tbsp of mayo. Sounds super weird but I found it helped the seasonings really stick to the chicken, and it also gives it a nice golden colour. It reminds me of the mayo grilled cheese hack that was trending a while ago. I didn’t list mayo as an ingredient but feel free to try it out and let me know how it goes!!
I find the using a potato ricer for mashed potatoes makes it so much easier. I also did use a whisk towards the end and extra splashes of heavy cream to make the potatoes very light and fluffy. You can also roast your garlic instead if you wish. I really eyeballed the measurements for the mash potatoes to tweak as you go!

Blackened chicken
- 2 chicken breasts cubed
- 1/3 cup flour
- cajun seasoning
- garlic powder
- onion powder
- paprika
- cayenne
- oregano
Mashed potatoes
- 3 potatoes
- 3 garlic cloves
- splash heavy cream
- heaping tbsp sour cream
- handful parmesan
- handful fresh parsley
- salt and pepper
Creamy garlic sauce
- 2 tbsp butter
- 2 garlic cloves
- 1 cup heavy cream
- handful parmesan
- handful parsley
- salt and pepper
- squeeze of lemon
Instructions
- Begin by mincing your garlic and peeling the potatoes. Chop the potatoes into smaller sections and add to salted water. Boil until fork tender.
- Meanwhile cube your chicken breasts and coat in the flour and seasoning mixture. Helpful hint: use some mayo to make the seasoning stick better.
- Add the chicken to a hot pan with oil and cook for a couple minutes of each side, allowing the seasoning to blacken.
- Mash potatoes in a bowl with all the listed ingredients. Add more heavy cream to get a smoother consistency.
- Tweak flavour to your liking. Set aside and keep warm.
- Remove the chicken pieces when cooked through, set aside and keep warm.
- In the same pan as the chicken, add the butter and garlic. Cook until fragrant then add the heavy cream. Once simmering, turn off heat and add parmesan, parsley, salt and pepper, and a squeeze of lemon. Mix together.
- Plate the mashed potatoes and add the blackened chicken bites on top, pour over the garlic cream sauce and enjoy!
