We are doing a traditional flour, egg, breadcrumb breading for this recipe. In order to maximize flavour I always like to season each component (flour, egg, and panko all get salt, pepper, paprika… you get the point). I really like to use panko breadcrumbs for breading anything, it always turns out crispy, plus its a lighter breadcrumb so it absorbs less oil and grease.

When cutting the zucchini I like to make them about the width of the end of my pinky. They’ll be the perfect size- small enough to bite easily, but still thick enough that they don’t shrivel up when air frying.

Ingredients for air fried zucchini chips

  • 2 zucchinis
  • 1/3 cup flour
  • 2 eggs
  • 2/3 – 1 cup panko
  • tsp salt & pepper
  • 1/2 tsp paprika
  • 1/2 tsp parsley flakes
  • 1/4 cup parmesan
  • 1/2 cup greek yogurt
  • 1/3 cup grated cucumber
  • 1 garlic clove
  • 1/2 a lemon juiced
  • 1/8 cup fresh dill
  • salt & pepper to taste

Instructions

  1. Start by slicing your zucchini into disk shapes about the thickness of the end of your pinky.
  2. Add flour, beaten eggs, and panko breadcrumbs to 3 separate bowls. Season the flour with the paprika and salt & pepper. Season the Panko with the parmesan, paprika, salt & pepper, and parsley flakes (same measurements for both). Mix well.
  3. Dip each zucchini disk into the flour, then eggs, then panko, being sure to press down well. Shake off any excess and add to your air fryer.
  4. Air fry for 9-11 minutes at 350 until golden brown and crispy.
  5. Meanwhile make the tzatziki dip by combining Greek yogurt, grated cucumber, grated garlic clove, lemon juice, fresh dill, and salt & pepper to taste.
  6. Serve with the dipping sauce and enjoy!
