Maple dijon chicken bake combines tender chicken, roasted sweet potato, brussels sprouts, red onion, and apple with a sweet and tangy maple dijon glaze for an easy one-pan dinner. Pan bakes are some of my favourite go-to dinner ideas when I don’t have a lot of time, energy, or ingredients.

Info and tips for maple dijon chicken bake

  • Since everything gets cooked at the same time in on pan, I recommend cutting your sweet potato into small cubes so they have enough time to cook all the way through. Same thing with the brussels- cut in half or quarters so they are cooked fully.
  • Choose a good apple meant for baking: Honeycrisp, Pink Lady, or Granny Smith work especially well since they hold their shape while baking.
  • Make sure you use a large baking sheet. You want enough room for the chicken and vegetables without overcrowding the pan.

Ingredients for maple dijon chicken bake

  • 2 chicken breasts
  • 1 small sweet potato
  • 250g brussel sprouts
  • 1 small red onion
  • 1 apple
  • 2 tbsp olive oil
  • 1 tbsp dijon mustard
  • 2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp salt & pepper

Instructions

  1. Preheat oven to 400 F.
  2. Begin by cutting your sweet potato into small cubes and the brussels in half or quarters. Thinly slice your red onion and apple.
  3. Add the chicken to a baking dish or sheet pan along with the sweet potato, brussel sprouts, red onion, and apple.
  4. Make the glaze by combining the olive oil, dijon mustard, maple syrup, and apple cider vinegar in a mason jar. Shake well until emulsified and pour over the veggies and chicken.
  5. Season with garlic powder, italian seasoning, and salt & pepper. Give everything a little mix and place in the oven for 25-30 minutes until cooked. Remove and enjoy!
