Info and tips for garlic peppercorn steak bites

I recommend using tenderloin for this recipe. It is a bit pricier but it will give you the best texture. Tenderloin is soft, melt-in-your-mouth, and so flavourful. When frying the tenderloin it’s very important to use a good heavy pan (I like cast iron or stainless steel), high heat, and letting the steak sit untouched. This will help you get that golden brown crust on the bottom.

For the sauce use the same pan you cooked the steak in (don’t get rid of the drippings!!!) for extra flavour. I like to serve with some mashed potatoes, but rice or pasta would be great too!

Ingredients for garlic peppercorn steak bites

Steak

  • drizzle of high heat oil
  • .5-.7 kg beef tenderloin
  • tsp salt & pepper
  • 2 crushed garlic cloves
  • 2 tbsp butter

Sauce

  • 1 shallot
  • 6 garlic cloves
  • 1 tsp flour
  • 1/4 cup beef stock
  • 1 cup heavy cream
  • 1 tbsp Worcestershire sauce
  • 20-30 peppercorns
  • salt & pepper to taste
  • chives (for garnish)
  • mashed potatoes (optional for serving)

Instructions

  1. Begin by getting your prep out of the way: Crush the (2) garlic cloves with the flat side of your knife. Mince the shallot and garlic. Chop the peppercorns into smaller pieces. Finely slice the chives. Cut off any bigger pieces of fat off the tenderloin and slice into bite sized pieces.
  2. Now add the tenderloin pieces to a bowl with a drizzle of high heat oil and season with salt & pepper. Meanwhile heat your cast iron on medium-high heat.
  3. Once hot and slightly smoking add your steak to the pan. Fry without touching for a couple minutes. Once you have a good sear, flip and fry the otherside.
  4. In the last minute of cooking add the crushed garlic and butter to the pan. Mix and remove the steak for the pan and set aside.
  5. In the same pan turn the heat to low and add the shallot and garlic. Fry for 1-2 minutes before adding the flour and mix well.
  6. Add the beef broth, heavy cream, Worcestershire sauce, chopped peppercorns, and salt & pepper to taste. Mix well.
  7. Serve the steak bites and peppercorn sauce with your choice of side and enjoy!
