Peach White Chocolate Muffins

These peach white chocolate muffins are perfect for a snack, dessert, or breakfast. They are light and fluffy, with juicy peaches, white chocolate chips, brown sugar cinnamon topping, and lightly glazed with icing.

Info and tips

I don’t bake as much as I cook, however I have learned a couple tips for muffins along the way.

I’ve made the mistake of over mixing the batter before. This creates a lot of air bubbles in the muffins. To avoid this only mix till everything is incorporated. The batter should be fairly thick and sticky.

To avoid the muffins sticking to the liners when you bake, try lightly spraying the liners with a spray oil. Or you can buy higher quality liners. This should help liners come cleanly off the muffins!

When filling the liners, fill them in between 1/2 or 3/4 full. Don’t fill them all the way or they will spill over when you bake them!

Ingredients

Dry ingredients

  • 2 cups flour
  • 1/2 cup white sugar
  • 1/4 packed brown sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt

Wet ingredients

  • 1 1/4 milk
  • 2 eggs
  • 1/4 melted butter
  • 1 tsp vanilla
  • 1 cup white chocolate chips
  • 1 1/2 cup peaches (frozen or fresh)

Topping

  • 1/3 sugar
  • 1/4 flour
  • tsp cinnamon
  • 1/2 unsalted butter

Glaze

  • Icing sugar
  • milk

Instructions

  1. Begin by mixing all the dry ingredients together (flour, white sugar, brown sugar, baking powder, salt).
  2. Mix all wet ingredients together in a separate bowl except for the peaches and white chocolate (milk, eggs, butter, vanilla).
  3. Make a well in the center of the dry ingredients and pour the wet in the center. Fold together till just incorporated. Do not over mix.
  4. Add in the peaches and white chocolate chips. Fold in.
  5. Add batter to lined muffin tins. Grease the liners if needed. Liners should be in between 1/2 to 3/4 full.
  6. Mix together the topping ingredients in a bowl. Break the butter apart with your fingers, mixture should be flaky and crumbly. Sprinkle crumble mixture on top on each muffin.
  7. Bake at 375 for 18-20 minutes, or until a toothpick comes out clean. Let rest for five minutes before removing to a rack to finish cooling.
  8. Make glaze by combining icing sugar and a little splash on milk. Start with 1 cup of icing sugar and 1-2 tbsp. of milk, adjust measurements to get desired consistency. Once cooled drizzle your icing glaze on each muffin and enjoy!
