Making the homemade dough can be very time consuming and tricky. It requires a lot of arm power to knead and roll the dough out thin. I seriously felt like I had done an arm workout after making this. So if you would like to take a short cut, buy some wonton wrappers and cut them into 4 squares. This will give you even dumpling wrapper squares without the hassle.
If you do want to make your own dough please note that the longer you let it rest, the softer and easier to work with it becomes. The minimum time I recommend resting is 30 minutes, but an hour or more is even better. Just wrap it in a damp tea towel or some saranwrap and let it sit at room temp. If you have a pasta maker, you can use that to roll it out thin to help save your arms!

Ingredients for homemade Manti (Turkish dumplings)
Dough
- 2 cups flour
- 1 large egg
- 1/2 cup water
- 1 tsp salt
Filling
- .250g ground beef or lamb
- 1 grated white onion
- 1/3 cup minced parsley
- 1 tsp salt & pepper
Yogurt sauce
- 1 cup Greek yogurt
- 4 minced garlic cloves
- 1/2 a lemon juiced
- salt & pepper to taste
Spiced Butter
- 1/2 cup butter
- 1 tbsp tomato paste
- 1 tsp paprika
- pinch of red pepper flakes
Instructions
- If you are not making your own dough just use wonton wrappers cut into 4 squares and skip all dough steps.
- Begin by mixing the water, egg, and salt in a bowl. Slowly sift the flour into the wet mixture, mixing with a spoon as you go. Pour out the shaggy dough onto a clean work surface and begin kneading for 10-15 minutes until soft and smooth. If dough seems a little dry you can wet your hands and continue kneading. Cover the dough with a wet tea towel or saranwrap and let rest for at least 30 minutes (the longer you let it rest the softer it becomes).
- Meanwhile make the filling by combining the ground meat with a grated onion, minced parsley, and salt & pepper. Mix well.
- Once the dough is soft enough split into 4 sections. Working 1 section at a time (keep the other sections covered to avoid drying out) roll out as thin as you can and cut into small squares with a knife or pizza cutter.
- Add a small amount of meat filling to the middle of the wrapper, and pinch the 4 corners together. Make sure it is sealed well to avoid opening during boiling. Repeat until all dough and filling are used up.
- Next bring a pot of water to boil and add the dumplings. Boil 8-10 minutes until they float and remove.
- Meanwhile make the garlic yogurt sauce by combining the Greek yogurt, minced garlic, lemon juice, and salt & pepper. Make the spiced butter by melting the butter, tomato paste, paprika, and red pepper flakes in a saucepan on medium heat.
- Spread the garlic yogurt onto a plate, add the cooked dumplings, and spoon the spiced butter overtop. Add any fresh herbs for garnish and enjoy!
