Tomato pest grilled cheese is one of my favorite ways to take an average grilled cheese and level it up, while still being an easy meal I can make on busy days. The tomatoes pair super well with the basil pesto, the mozzarella makes it so cheesy, and the garlic butter makes it that much better.
When making the garlic butter I highly recommend using fresh chopped garlic over canned or powder. It makes the flavor that much better! I also warmed the butter up in the microwave for 10 seconds to make it easier to mix.
I used roma tomatoes, but your favorite tomatoes will work, or even cherry tomatoes!
Ingredients
- 1 clove garlic
- 2-4 tbsp. softened butter
- handful of parsley
- salt
- pepper
- your choice of bread
- tbsp. basil pesto
- 4 slices of tomatoes
- sliced mozzarella
Instructions
- Make the compound butter by combining garlic, softened butter, parsley, salt and pepper.
- Spread compound butter on the outsides of the bred. Spread basil pesto on insides. Place sliced tomatoes and mozzarella on the bread. Place in a pan on medium heat and cover. When mozzarella is almost melted press sides together and fry until both sides are golden. Slice in half and enjoy!
