Dill Pickle pasta salad is perfect for summer. This pasta salad features tender noodles covered in a tangy pickle ranch sauce, with cheddar cheese, crispy bacon, and tons of fresh herbs.
Info and tips for dill pickle pasta salad
I like to eat this pasta salad as soon as its done, but you can also leave this in the fridge until you are ready to serve. I find after a day in the fridge the pasta salad becomes even more flavourful, as the noodles have absorbed more of the dressing.
You can sub out any of the ingredients if needed. Good alternatives to bacon are chicken, ham, or even some cold cut meats like salami. For the dressing you can sub out sour cream with Greek yogurt. If you want to add a boost of protein, cottage cheese is also a good alternative to add to the dressing.

Ingredients for Dill Pickle Pasta Salad
- 450g bow tie pasta
- 5 pieces thick cut bacon (about 1/2 cup cooked and chopped)
- 1 cup chopped pickles
- 1 cup cubed cheddar
- 1 shallot
- 1/4 fresh minced dill
- 2 green onions
- 1/2 cup sour cream
- 1/4 cup mayo
- 1/3 cup pickle brine
- tbsp ranch seasoning
- 1/2 tsp smoked paprika
- salt and pepper to taste
Instructions
- Start by boiling your pasta till al dente and cooking your bacon till crispy.
- Strain the pasta, drizzle with oil to prevent sticking and set aside. Remove bacon from pan, pat dry, cut into small pieces with a knife and set aside.
- Chop your pickles, cube your cheddar, mince the shallot and fresh dill, thinly slice the green onion. Set aside.
- Make the dressing by combining sour cream, mayo, pickle brine, ranch seasoning, smoked paprika, and salt & pepper. Give it a good mix and set aside.
- Now for the fun part! Grab a large bowl and add the pasta, bacon, pickles, cheddar, shallot, fresh dill, and green onion. Pour the dressing over top and mix to combine.
- Serve immediately or leave in the fridge to chill. Enjoy with your favourite BBQ dishes!
