Crockpot scalloped potatoes are the perfect easy low effort side dish for the holidays. This recipe features thinly sliced potatoes cooked slowly in a creamy dedicant cheese sauce.
Info and tips for crockpot scalloped potatoes
For this recipe it’s important to make sure your potatoes slices are all the same thinness to ensure they cook evenly. I recommend cutting them as thin as possible to decrease the amount of time it takes for them to become tender. You can use a mandolin if desired, but a sharp kitchen knife works just as well!
I also like to make the sauce before adding it to the crockpot. Some recipes will have you throw everything in, which is totally fine! But for max flavour and consistency I recommend making the sauce first. This way you can taste as you go and ensure the cheese doesn’t split. One tip I have for the cheese sauce is to over salt it. Potatoes are very plain and need a lot of salt to bring out their flavour. They will absorb the extra salt, leaving you with perfectly seasoned scalloped potatoes.

Ingredients for crockpot scalloped potatoes
- ¼ salted butter
- 4 minced garlic cloves
- ½ cup chicken broth
- 1 ½ cups heavy cream
- ½ cup sour cream
- 2 cups shredded cheddar cheese
- 1-2 tsp of salt
- Tsp pepper
- Tsp garlic powder
- Tsp onion powder
- Tsp paprika
- 5 cups thinly sliced yellow potatoes
- Parsley and red pepper flakes for garnish
Instructions
- Begin by mincing your garlic, shredding your cheese, and thinly slicing your potatoes. The potatoes should be about a 1/4 inch thick or smaller.
- Make the cheese sauce by melting the butter and adding the garlic in a pot. Sauté a couple minutes until fragrant, before adding the chicken broth, heavy cream, and sour cream. Bring to a gentle simmer, stirring occasionally. Then add 1 cup of cheddar cheese, and seasonings off heat. Mix well.
- Next, layer the sauce and potatoes in your Crock-Pot, adding the last cup of cheese on top. Cook on high for 4 hours until potatoes are tender.
- Garnish with fresh parsley and red pepper flakes if desired and enjoy!
