When making soups it’s really important to cook each layer slowly in order to give enough time for the flavours to develop. For example when cooking the mirepoix (onion, carrot, celery), you want to cook it down until everything softens and gets fragrant. This takes about 10ish minutes over medium heat. Rather then trying to brown the veggies, think about trying to slowly extract the sweetness.

For chicken broth I will always recommend making your own with a concentrated chicken base and water. This way you can control how salty the broth is. I find the cartons of chicken broth to be so watery and flavourless. I always use the brand “Better Than Bouillon” to make mine.

Ingredients for broccoli cheddar gnocchi soup

  • drizzle of olive oil
  • 2 tbsp butter
  • 1 onion, diced
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 4 garlic cloves, minced
  • 2 tbsp flour
  • 3 cups chicken broth
  • 3 cups broccoli, chopped
  • 1 cup milk
  • 1 cup heavy cream
  • 3 cups gnocchi
  • 3 cups shredded cheddar cheese
  • 1 tsp italian seasoning
  • 1 tsp paprika
  • salt and pepper to taste

Instructions

  1. Begin by getting your prep out of the way. Dice the onions, carrot, and celery. Mince the garlic. Chop the broccoli into small pieces. Shred the cheddar cheese.
  2. In a large pot over medium heat add the olive oil and butter. Once melted add the diced onions, carrots, and celery. Cook for about 10 minutes stirring occasionally until soft and fragrant.
  3. Next add the minced garlic. Cook another 1-2 minutes before stirring in the flour.
  4. Pour in the chicken broth and add the broccoli. Bring to gentle simmer, turn the heat to low, and cover for 10 minutes.
  5. Once the broccoli has softened a bit add the milk and heavy cream. Bring back up to a simmer and add the gnocchi. Simmer for a few minutes until gnocchi is cooked.
  6. Shut off the heat and add the shredded cheese and seasonings. Taste test and adjust to your preference. Serve in a pumpkin bowl for extra comfort points and enjoy!
