BBQ ranch sweet potato bowl is a great meal idea for anyone who is short on time but still wants big flavour. This bowl features roasted sweet potatoes, shredded chicken, savoury beans, and a tangy coleslaw topped with BBQ ranch.

Info and tips for BBQ ranch sweet potato bowl

Since this recipe is part of my “College Cooks” series. I do have some tips if you want to cut down on time and make it easier:

  • Buy frozen sweet potatoes and just pop them in the oven so you don’t have to cut them yourself!
  • Buy a rotisserie chicken and shred so you don’t have to worry about dealing with raw chicken
  • Use your favourite canned beans. I used Bush’s Sidekicks (the southwest zest pinto beans). I found them absolutely delicious, but use what you want here πŸ™‚ Beans are a great way to add a little extra protein and fiber.

This recipe works great if you’d like to meal prep! Just store the coleslaw separately as the dressing can make everything else quite soggy.

Equipment

You can also roast the sweet potatoes in the airfryer instead of the oven. I recommend this Ninja one, it’s my favourite!

Ingredients for BBQ ranch sweet potato bowl

  • 1 large sweet potato
  • drizzle of olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt & pepper
  • 1 can pinto beans
  • 2 shredded chicken breasts (or rotisserie)
  • β…“ cup BBQ sauce
  • Β½ cup greek yogurt
  • β…“ cup ranch
  • 1 lemon juiced
  • 1 bag (400g) coleslaw mix
  • feta , for topping
  • 1 green onion, for topping

Instructions

  1. Preheat your oven to 415 degrees F.
  2. Cut your sweet potato into small cubes. Add to a bowl and drizzle some olive oil and season with garlic powder, onion powder, smoked paprika, and salt & pepper. Place on a baking sheet and bake for 25-30 minutes or until fork tender.
  3. Meanwhile shred your chicken and add the BBQ sauce. Mix well and set aside.
  4. Next make the coleslaw dressing by mixing the greek yogurt, ranch, and lemon juice together. Add the coleslaw and toss.
  5. Next heat your beans in a saucepan until warmed through. Add any seasonings you desire.
  6. Finally plate everything by adding a layer of sweet potatoes, pinto beans, shredded chicken, and coleslaw. Top with extra BBQ ranch, feta, and green onion.
