Using a blender when making the batter for the egg bites will help get everything super evenly mixed. It also helps incorporate air into the batter, resulting in fluffier egg bites. These are super customizable, so if you’d like to add in any extras feel free! You could add green onions, chives, sliced red pepper, mushrooms… lots of options.
These store well in both the fridge and freezer. Just make sure they are sealed in an airtight container or plastic bag. Reheat by popping in the microwave, or I recommend using the oven to keep the best texture and flavour.

A quality muffin tin will help your egg bites not stick to the bottom.
Ingredients for hash brown bacon egg bites
- 36 tater tots (3 per muffin tin)
- 6 slices bacon, chopped
- 6 eggs
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- ยผ cup shredded parmesan
- 1 tsp salt & pepper
Instructions
- Begin by preheating your oven to 400 F. Add three tater tots to each muffin tin and add 6 slices of bacon to a parchment lined sheet pan. Place both in the oven for 15-25 minutes until the tater tots and bacon are golden and crispy.
- Meanwhile blend the eggs, cottage cheese, cheddar cheese, parmesan, and salt and pepper for 30 seconds until smooth.
- Use a small cup to smash the tater tots down, creating a flat base for the egg mixture. Fill each muffin tin up with egg batter about 3/4 of the way full.
- Lower the oven to 350 F and bake the egg bites for 20-25 minutes until firm and fluffy. Remove once cool and enjoy!
