Maple pumpkin spice muffins are a perfect snack or breakfast to have handy this fall. This recipe is made with healthier wholesome ingredients, incredibly soft, and filled with warming fall flavours.

When baking almost anything it’s important not to overmix. Overmixing the muffins will over develop the gluten, which leads to a tough and dense texture. This is because it crushes the air bubbles that help achieve the fluffy texture.
Using olive oil helps keep the muffins moist and adds healthy fats! Make sure to use a high quality light or mild olive oil to avoid the flavour overwhelming the pumpkin. I like to top mine with some extra rolled oats, pumpkin seeds, pumpkin spice, and granulated sugar for a pretty finish. You can add any extra mix ins you’d like: cranberries, nuts, or dark chocolate are some that would be delicious!

Use a good quality heavy Muffin Tin pan for best muffin shape and texture.
Ingredients for maple pumpkin spice muffins
- β cup olive oil
- Β½ cup maple syrup
- 2 eggs
- 1 cup pumpkin purΓ©eΒ
- ΒΌ cup milk
- 2 tsp vanilla
- 1 tsp baking soda
- Β½ tsp salt
- 1 tsp pumpkin spice
- 1 cup all purpose flour
- ΒΎ cup whole wheat flour
- β cup old fashioned oats
- ΒΌ cup pumpkin seeds
- granulated sugar for topping
Instructions
- Begin by whisking the olive oil and maple syrup in a bowl until emulsified.Β
- Next add the eggs and whisk together.Β
- Add the pumpkin purΓ©e, milk, vanilla, baking soda, salt, pumpkin spice, all purpose flour, wheat flour, old fashioned oats, and pumpkin seeds to the bowl. Gently fold together until combined.Β
- Let the batter rest covered in the fridge for 1 hour
- Preheat your oven to 400F 10 minutes before baking.Β
- Next add a scoop of batter to each lined muffin tin (I used an ice cream scoop). Top each muffin with more rolled oats, pumpkin seeds, pumpkin spice, and granulated sugar.Β
- Bake in the oven at 400 F for five minutes. Then turn the temperature down to 350 F and continue baking for 12-15 minutes until a toothpick comes clean.Β
- Remove and enjoy warm with some butter!
