Dumpling Thai curry soup is a super easy meal that can be made completely in the rice cooker. This recipe is creamy and spicy, made with fresh veggies and frozen dumplings, for an easy flavour packed meal.

Info and tips for dumpling thai curry soup

For this recipe you can use any dumplings you’d like. Frozen gyoza, wontons, or even soup dumplings all can be used. You can also add in any veggies you want besides the bok choy and red pepper. Some other great options are mushrooms, shredded carrots, spinach, or peas.

Red curry paste has varying heat levels depending on the brand. I use Thai Kitchen and find 1 tbsp the perfect amount of spice. Try to find a curry paste that uses real minimal ingredients for the best flavour.

This soup stores for 2-3 days in the fridge, but keep in mind the dumplings will soften as they absorb more liquid.

Ingredients for dumpling thai curry soup

  • 10 frozen dumplings
  • 1 tbsp red curry paste
  • 3 minced garlic cloves
  • 1 tsp minced ginger
  • 2 tbsp soy sauce
  • Β½ a sliced red bell pepper
  • 1 sliced baby bok choy
  • 2 cups chicken broth
  • 1 can (400ml) coconut milk
  • 1 lime wedge for garnish
  • cilantro for garnish
  • chili crisp for garnish

Instructions

  1. Start by adding the frozen dumplings, red curry paste, minced garlic, minced ginger, soy sauce, red bell pepper, bok choy, chicken broth, and coconut milk to a rice cooker. Alternatively you can also do this in a pot on the stove.
  2. Next cook for 20 minutes until the dumplings are cooked through. Give everything a gentle mix and serve with a lime wedge, cilantro, and chili crisp for garnish if desired.
