Mini egg cookie bars are the perfect treat for Easter! This recipe features thick cookie bars packed with mini eggs and chocolate—crispy on the outside, soft and gooey inside.

Info and tips for mini egg cookie bars

To make cookie bars with crispy edges and soft centers it’s important to mix the melted butter together with the sugars until smooth. This helps create chewier and fudgier cookies that are more compact. Using a mix of white sugar and brown will also help give crispy edges and chewy centers- the white sugar provides the crispiness, and the brown sugar provides the chewiness.

Make sure to take the cookies out of the oven when the center still looks slightly underdone. They will continue baking in the pan and stay nice and soft.

I used a 9 Inch Baking Pan for the cookie bars.

Ingredients for mini egg cookie bars

  • ½ cup melted butter
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 tsp baking powder
  • 1 & ¼ cup all purpose flour
  • ½ tsp salt
  • ½ cup Mini eggs
  • ¼ cup Mini mini eggs
  • 100g chopped dark chocolate

Instructions

  1. Preheat the oven to 350 F.
  2. Begin by mixing the melted butter with the brown and white sugar in a bowl.
  3. Next add in the egg and vanilla. Mix until just combined.
  4. Add in the baking powder, all purpose flour, and salt. Fold together until just combined.
  5. Then add in your mini eggs and chopped dark chocolate. Gently fold in.
  6. Add the dough to a 9 inch baking pan and bake for 25-30 minutes until the edges are brown and center is still soft.
  7. Let cool before cutting into squares and enjoy!
