Crispy parmesan brussels sprouts are a super easy way to level up your holiday appetizer/sides game. This recipe features tender brussels sprouts roasted in spices with a crispy parmesan crust.
Info and tips for crispy parmesan brussels spouts
Boiling the brussels sprouts prior to roasting them will help them be more soft and tender. I boiled mine for 6-7 minutes and they were tender with a little bite of bite still. If you want to make smashed parmesan brussels sprouts you can boil for 10-12 minutes until they are really soft, and then press down with a heavy sheet pan or glass.

Ingredients for crispy parmesan brussels sprouts
- 2 lbs of brussels sprouts
- drizzle of olive oil
- 1/2 a tsp salt & pepper
- 1/2 a tsp paprika
- 2 cups grated parmesan
- 1/2 cup mayonnaise (optional garlic bacon aioli)
- 1 clove minced garlic (optional garlic aioli)
- 1 tbsp bacon bits (optional garlic aioli)
- juice from 1/4 of a lemon (optional garlic aioli)
- salt & pepper to taste (optional garlic aioli)
Instructions
- Start by washing your brussels sprouts. Add them to a pot of boiling salted water and boil for 5-6 minutes. If you want them softer boil for 10-12 minutes.
- Next trim off the stems and slice them in half. Add the halved brussels sprouts to a bowl along with a drizzle of olive oil, paprika, and salt & pepper. Mix well.
- Add about a tbsp of parmesan for each brussels sprout to a sheet pan, place them directly on top, cut side down. Bake in the oven at 400 F for 10-12 minutes until the parmesan is cripsy.
- If you want the garlic bacon aioli for dipping combine all ingredients in a small bowl.
- Seve the brussels sprouts with the garlic bacon aioli and enjoy!
