This is a great recipe to make ahead of time for a summer gathering. It actually gets better after it sits for a bit! Letting it chill in the fridge for at least 30 minutes gives the flavors time to meld together beautifully.
Cook the pasta just to al dente. It holds up better in a cold salad and wonโt get mushy as it sits. I love serving it cold, but room temp also tastes great! If you want to add some extra protein, some grilled chicken, roasted chickpeas, or some spicy salami would be great!

Ingredients for sun-dried tomato pasta salad
- 4 cups pasta
- ยผ cup olive oil
- 2 tbsp sun dried tomato oil
- ยผ cup balsamic vinegar
- 1 tbsp pasta seasoning blend (I used Dash’s Mediterranean blend)
- 1 cup chopped packed spinach
- 1 cup halved cherry tomatoes
- 5 minced sun-dried tomatoes
- ยฝ a minced red onion
- 3 minced garlic cloves
- ยฝ cup shredded parmesan
- 200g bocconciniย
- ยผ cup minced basilย
Instructions
- Begin by boiling the pasta in salted water until al dente. Strain and add to a big bowl.
- Meanwhile do your prep: chop the spinach, half the cherry tomatoes, mince the sun-dried tomatoes, mince the red onion, mince the garlic cloves, shred the parmesan, and mince the basil.
- Add the olive oil, sun-dried tomato oil, balsamic vinegar, and seasoning blend to the bowl. Mix well until the pasta is coated.
- Add the chopped spinach, cherry tomatoes, sun-dried tomatoes, red onion, garlic, parmesan, bocconcini, and basil. Mix well and serve chilled or at room temp.
