Spicy Chicken Sandwich

Spicy chicken sandwich features tender crispy chicken with a spicy mayo sauce and tangy pickles on a butter fried bun.

A spicy chicken sandwich is one of my favourite things to order from restaurants. This recipe features tender crispy chicken with a spicy mayo sauce and tangy pickles on a butter fried bun.

Info and tips for spicy chicken sandwich

I like using chicken breasts for this recipe but you can also use chicken thighs, I just prefer less fat on my chicken! If you are using chicken breasts you want to cut them in half so that they are about the same size as a chicken thigh. I like to use a meat tenderizer to flatten out the chicken, this will help it cook evenly and make it more tender. Placing a sheet of plastic wrap on the chicken will help protect the skin from getting damaged by the meat mallet.

I did a shallow fry to cook the chicken. This method uses less oil and the food only gets partially submerged in oil. I fill up my pan with enough oil to halfway cover the chicken. Your oil should be hot enough that it immediately bubbles up when you put in the chicken. You want to hear a nice frying bubbly sound.

Ingredients for spicy chicken sandwich

wet batter

  • 2 chicken breasts
  • 1 cup buttermilk
  • 2 tbsp hot sauce
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cajun seasoning
  • 1 tsp salt & pepper

dry batter

  • 1 cup flour
  • 1/2 cup corn starch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cajun seasoning
  • 1 tsp salt & pepper

sandwich

  • 1/3 cup mayo
  • 1 tsp hot sauce
  • 1 tsp cajun
  • 4 brioche buns
  • pickles
  • oil for frying

Insturctions

  1. Begin by cutting your chicken breasts in half. Lay a sheet of plastic wrap overtop and flatten out the chicken breasts with a meat mallet into about 1/2 an inch thickness.
  2. Mix the buttermilk, hot sauce, and seasonings in a bowl to form the wet batter. Add the chicken and let marinate for at least 30 minutes (but the longer the better).
  3. Meanwhile mix the flour, cornstarch, and same seasonings in a separate bowl to form the dry batter and set aside. Mix the mayo with the hot sauce and Cajun seasoning to make the spicy mayo and set aside. Fry your buns in some butter or oil to get them nice and crispy, and slice your pickles. This will help get all your prep out of the way.
  4. Start heating your oil when your are about 10 minutes away from being ready to fry the chicken. I like to add enough oil to cover about half of the chicken.
  5. Once the chicken is marinated you can add a couple tablespoons of the wet batter to the dry batter and mix. This trick will help you get that thick crispy batter on your chicken. Dip the chicken breasts one at a time into the dry batter, making sure everything is coated. Shake off any excess flour.
  6. Add the chicken breasts to your pan with hot oil. It should bubble up immediately. Keep your heat on medium high and continue cooking for about 4-5 minutes on each side until the chicken is completely cooked through. Once cooked remove from the oil and rest on a wire rack to drip dry.
  7. Now all that’s left to do is assemble! Add some spicy mayo to your toasted buns, along with the crispy chicken, and tangy pickles. Serve with some fries, mash potatoes, or mac and cheese and enjoy!
