Soft and chewy s’more cookies are the perfect treat for those summer nights. This recipe takes everything you love from the classic s’mores dessert and combines it into a fudgy warm cookie.
Info and tips for soft & chewy s’more cookies
One tip I always swear by when baking cookies is pulling them out of the oven a couple minutes early. At first they’ll look really undercooked, but leave them on the hot pan until they cool and harden and you’ll be left with the softest cookies ever. If you leave cookies in the oven until they are hard while warm, they’ll be extra hard when the cool and set. These cookies only need 8-10 minutes in the oven max for the perfect soft cookie.
Use an ice cream scooper to scoop out the dough if you want even sized large cookies. An actual cookie scooper I find is too small, but an ice cream scooper is perfect!

Ingredients for soft & chewy s’more cookies
- 1 cup melted salted butter
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 2 large eggs
- 2 tsp vanilla
- 2 and a 1/2 cups flour
- tsp baking soda
- 1/2 tsp salt
- 1 and a 1/2 cups mini marshmallows
- 1 and a 1/2 cups golden grahams cereal
- 1/2 cup chocolate chips
- 1 broken up Hershey’s chocolate bar
Instructions
- Preheat the oven to 375 Fahrenheit.
- Melt the butter and add it to a large bowl along with the white and brown sugar. Whisk well until combined.
- Whisk in eggs one at a time until a light caramel colour is formed. Stir in vanilla.
- Mix flour, salt, and baking soda together in a separate bowl. Fold the dry ingredients into the wet batter with a wooden spoon until combined.
- Add in the marshmallows, cereal, and chocolate and fold together until incorporated.
- Form into about 18 large cookie balls and add to parchment lined cookie sheets. Press extra toppings into the top of the cookies.
- Bake in the oven for 8-10 minutes. Let cool completely on the hot sheet pan to finish cooking and setting before removing onto a wire rack. Enjoy with a cold glass of milk 🙂
