Pink sugar cookie bars are soft and chewy topped with a vanilla cream cheese frosting, made easily in one pan for the perfect bakery-style dessert at home. With the pretty pink color and thick layer of frosting, these cookie bars are so perfect for Valentine’s Day or honestly just for yourself anytime of the year.

Info and tips for pink sugar cookie bars

Here are my top tips for cookie making:

  • Always make sure your butter is softened. When softened butter creams with sugar it traps air, which creates light tender cookies
  • Don’t over mix! Over mixing cookies over develops the gluten, which leads to tough texture and flat cookies.
  • Over baking the cookie bars will make them dry instead of chewy. You want the cookie bars to be just set in the centre. This keeps them softer for longer.

Ingredients for pink sugar cookie bars

Cookies

  • Β½ cup salted butter
  • ΒΎ cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 Β½ cups AP flour
  • Β½ tsp baking powder
  • ΒΌ tsp salt

Icing

  • Β½ cup cream cheese
  • ΒΌ cup salted butter, softened
  • 1 Β½ cups powdered sugar
  • 1 tsp vanilla
  • Red food colouring
  • Valentines sprinkles

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line a 9Γ—9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, beat the butter and granulated sugar together until light and fluffy, about 1–2 minutes.
  3. Mix in the egg and vanilla extract until fully combined, scraping down the sides of the bowl as needed.
  4. Gradually add the dry ingredients to the wet ingredients and mix just until combined. Do not overmix.
  5. Press the dough evenly into the prepared pan. Bake for 18–22 minutes, or until the edges are set and the center looks just slightly underbaked.
  6. Meanwhile in a medium bowl, beat the cream cheese and softened butter until smooth and creamy. Mix in the powdered sugar and vanilla until light and fluffy. Add red food coloring a little at a time until your desired pink shade is reached.
  7. Spread the icing evenly over the cooled cookie bars and top with Valentine’s sprinkles. Chill for 20–30 minutes for cleaner slices, then cut into bars and enjoy!
