One Pot Broccoli Cheddar Pasta

One pot broccoli cheddar pasta is so simple, cheesy, and delicious. All the elements of broccoli cheddar soup combined into a creamy dreamy pasta that can be made in under 30 minutes!

The method of cooking the pasta in the sauce is an easy way to eliminate dishes. I use this method all the time when I’m craving pasta, but don’t want the hassle of separate pots.

Make sure you stir often. The pasta will try and stick to the bottom of the pot, especially when most of the liquid is gone. If you notice the pasta isn’t quite done yet and it doesn’t look like enough liquid to finish cooking, add a splash of half and half/chicken broth and give it a stir. Keep repeating this if necessary until the pasta is done cooking!

I like to cover when I add the broccoli to conserve more of the liquid and kind of steam the broccoli.

While this pasta is low dishes and effort, you do have to keep a watchful eye on it. The pasta will take longer to cook this way compared to boiling it in water.

Ingredients

  • 3 tbsp butter
  • 4 cloves garlic
  • half a shallot
  • pinch red pepper flakes
  • 2 and a 1/4 cups chicken broth
  • 2 cups half and half
  • 4 cups pasta
  • 3 cups chopped broccoli
  • tsp paprika
  • tsp mustard powder
  • tsp oregano
  • salt & pepper (to taste)
  • 1 cup cheddar
  • 1/2 cup parmesan
  • squeeze of lemon
  • fresh parsley

Instructions

  1. Begin by preparing your produce. Mince the garlic and shallot, and roughly chop the broccoli. Set aside.
  2. In a large pot add the butter. Once melted add the minced garlic and shallot with a pinch of red pepper flakes. Saute until fragrant (about 1-2 minutes).
  3. Add the chicken stock and half and half to the pot. Stir well and bring to a boil.
  4. Once boiling add the pasta and turn the heat down to medium low. Stir frequently to prevent sticking.
  5. Once pasta is 3/4 done add the chopped broccoli and cover. At this point there will be the most risk for sticking so stir often. Add an extra splash of chicken broth/half and half as required to finish cooking (everyone’s sauce preference is different so feel free to make more/less saucier at this point).
  6. When pasta is al dente shut off the heat and add the listed seasonings and cheeses. Stir well and add a fresh squeeze of lemon. Top with fresh parsley, lemon zest, red pepper flakes, and more parm if desired and enjoy!

    Once you add the pasta do you leave it boiling or turn it down to cook?

      Let it come to a low simmer! You don’t want the heat too high, somewhere between medium and low πŸ™‚
